Bringing Their Future to the Table – Young Chefs Take on the World
At the regional final of S.Pellegrino Young Chefs Academy Competition 2024/25 the future of fine dining (and sustainability-conscious cuisine) proves to be in excellent hands. CAPE TOWN SOUTH AFRICA - The calibre of chefs gathered in one room at the S.Pellegrino Young Chef Academy regional finals in Cape Town in November 2024 reflects a competition that resonates on the world stage. As the competing young chefs focus intensely on creating their signature dishes in the five hours allocated, the mentors at their side read like a who’s who of the restaurant scene of the vast region, which encompasses Africa, the Middle East and South Asia: there’s Johannes Richter of The Living Room at Summerhill (in KwaZulu Natal), Fabio Daniel of Rust en Vrede (in Stellenbosch), Gregoire Berger of Ossiano, Saverio Sbaragli of Michelin star Al Muntaha, Daniel Birk of 2 Michelin star Row on 45 (the last three in Dubai). Overseeing the whole competition is the esteemed jury of celebrated chefs and restauranteurs: Bertus Basson (South Africa), Akmal Anuar (Dubai) and Roaya Saleh (Bahrain) who have the unenviable task of identifying the winner from among the fifteen creative and talented young stars currently cooking up a storm. The S. Pellegrino Young Chef Academy is about far more than simply picking a winner. The whole event is structured with a view to the future of gastronomy. Young chefs taking part are challenged to push their creativity, their technique, their connection. They get to meet competitors from other countries and their mentors, exchange ideas, attend forums, network, socialise. Over the course of the intense two-day journey they expand their horizons immeasurably. Sustainability A common theme that emerged as the contestants presented their dishes to the jury was their consciousness of reducing waste in the kitchen. A number of beautifully conceived and presented dishes were built on the concept of using the whole animal or, in the case of Stefano Maffioli …

Luckson Mare Is the Winner of the S.pellegrino Young Chef Academy Competition 2024-25 Regional Final: He Will Be Representing the Africa, Middle East & South Asia at the Grand Finale in Milan
The S.Pellegrino Young Chef Academy has crowned chef Luckson Mare from The Living Room at Summerhill Guest Estate in Durban, KwaZulu-Natal as the winner of the competition’s Regional Final for the Africa, Middle East & South Asia region. Mare earned the title after an exciting two-day cook-off held on the 18th and 19th of November 2024 at Atlantic Studios in Cape Town, South Africa. Luckson Mare distinguished himself among the region’s most talented young chefs with his exceptional skill, dedication, and ambition, securing a coveted spot at the Grand Finale in 2025. Mare impressed the esteemed regional jury (Roaya Saleh from Bahrain, Bertus Basson from South Africa & Akmal Anuar from the United Arab Emirates) with his signature dish, Duck, Sweet Potato, and Matungulu (Natal Coastal Plum). "My culinary journey began in my mother's kitchen, where, as the youngest of five, I was always tasked with helping to cook. My mother has a deep love for sweet potatoes and could tell, just by taste and texture, when they were harvested. I've taken this humble root and paired it with duck—poultry that, to me, represents the essence of fine dining. This reflects the lessons I've learned in the industry, particularly in butchering. I've also incorporated wild-foraged matangulu, a tribute to Chef Johannes, whose teachings have profoundly shaped my approach to cooking," says Mare. As he prepares for the Grand Finale, Chef Luckson will work closely with a mentor to refine his signature dish and hone his gastronomic skills. His mentor will be Chef Johannes Richter, the executive chef at the award-winning The Living Room at Summerhill Guest Estate. In addition to Mare's win, three other chefs received awards during the Regional Final, earning opportunities to compete for global titles at next year’s Grand Finale: • S.Pellegrino Social Responsibility Award – Zanté Neethling from Beyond Restaurant in Cape Town • Acqua Panna Connection in Gastronomy Award – Robin Höfer …
